It has been an educational journey by being wheat and gluten free. My diet took a radical change after I read Wheat Belly. Prior to reading the book, a year earlier I learned I was lactose intolerant and a month before leaving for China a year, I suffered from blood poisoning. Needless to say, it’s been a year for me being wheat free!!! Readers I am living proof pasta, bread and pastry lovers can be wheat free. I now try to limit my intake with gluten free flours and find vegetable alternatives for my pasta cravings.
I am Noodles for Spaghetti Zucchini
A year ago through reading I learned about the veggie noodle maker. It’s been on my wish list ever since. You know how in old films children get wide-eyed looking at their favorite toy in the window display before Christmas. Yes, those were my eyes.
I took some pictures of my cousin’s wedding and as a thank you my aunt treated me with a gift: a veggie noodle maker. Thank you Aunt Karen.

I knew I was excited but once I was seeing the zucchini meta-morph into a noodle I felt like it was Christmas morning in my house. My kitchen’s fun experience quadrupled: I was making dinner, but it felt like I was playing with a toy. (Don’t tell Denny I have too much fun in the kitchen.)
Not only did I have a blast, but this is now my favorite meal and veggie pasta alliterative. (Sorry cauliflower, you will be put on hold for awhile. ) I highly recommend buying a veggie noodle machine versus cutting veggies by hand. The machine has a finer cut and it’s half the time.
Here’s the secret to having a healthy quick veggie pasta meal:
Zucchini Noodles
1) BUY
a veggie noodle maker
2) WASH
a zucchini for each person (1 zucchini=1 serving per a person)
3) PLAY
put the zucchini through the machine (Optional): put a yellow onion through the machine and mince garlic
4) Saute
the zucchini, onion and garlic (Note: break the noodles up with your hands or they will be extra long. The frying pan doesn’t need to be oiled; the zucchini has a lot of water. Cook it on medium heat for about 10-15 minutes.)
5) Season
with marinara or whatever pasta sauce you want! =)
My zucchini noodle meal tasted exactly like wheat spaghetti. It has the same texture. I am not missing anything. It’s the seasoning that make pasta’s great. Try it and let me know what you think!
