This simple meal is basically chorizo, eggs and lots of fresh veggies in a bowl. GLUTEN-FREE! I was surfing the net and couldn’t find any chorizo primal recipes so I made up my own.
Ingredients:
– about 1 lb of chorizo meat
– 6 eggs
– almond milk ( for cooking eggs)
– 2 tomatoes
– 2 springs of green onion
-1 green pepper
– 1 yellow onion
– 3 carrots
– 1 zucchini
– carton of mushrooms
Directions:
1) cook meat
2) cut mushrooms, yellow onion and zucchini up, sauté
3) cut up the rest of the vegetables ( shred carrots) DO NOT COOK
4) cook eggs ( chicken broth is optional)
5) mix it all together ( look at top picture for guidance) [sprinkle green onion for a pro-cook look 🙂 ]
